Vanilla Cupcakes with Vanilla Cream Cheese Frosting

Ingredients
  • 2¼ cups flour
  • 2½ tsp. baking powder
  • ¼ tsp. salt
  • 8 Tbsp butter, at room temperature
  • 2 cups sugar
  • 2 large eggs, at room temperature
  • 2¼ tsp. vanilla
  • 1¼ cups whole milk, at room temperature
  • Frosting (5½ Tbsp. butter, at room temperature, 5½ cups powdered sugar ½ tsp. vanilla
  • 8 oz. cream cheese, at room temperature)
Instructions
  1. Preheat oven to 350.
  2. Line muffin tins with cupcake foils.
  3. Add flour, baking powder, and salt to a small bowl and combine.
  4. Beat sugar and butter in a mixing bowl for 3-5 minutes until fluffy.
  5. Beat in eggs one at a time.
  6. Mix together milk and vanilla in a small bowl.
  7. Beat in ⅓ cup of your flour mixture then ⅓ cup your milk mixture and continue alternating until all ingredients are added and batter is smooth.
  8. Pour batter into tins filling ⅔ of the way.
  9. Bake for 16-18 minutes or until cupcakes pass the toothpick test.
  10. Allow to cool on wire rack fully.
  11. Prepare frosting by beating all ingredients in a mixing bowl until smooth.
  12. Pipe frosting onto cooled cupcakes using a pastry bag.
  13. Decorate with sprinkles.
