Veggie Kabobs

- 1 large zucchini, sliced into wheels
- 1 cup grape tomatoes
- 2 red peppers, sliced thick
- 1 red onion, sliced thick
- 2 cup cremini mushrooms, whole or sliced in half for the larger ones
- ¼ cup olive oil
- juice from 1 large lemon
- 2 tbsp. red wine vinegar
- 1 tsp. Italian seasoning
- ½ tsp. garlic powder
- ½ tsp. salt
- ½ tsp. fresh ground pepper
- Add veggies to a large bowl.
- Add rest of ingredients and toss.
- Let sit for 15 minutes.
- Thread veggies onto skewers.
- Grill of medium high heat for 5 minutes per side.
