Ingredients
  • 1 cauliflower head, chopped into florets
  • 1 egg
  • 16 oz fresh mozzarella, divided
  • ¼ cup fresh Parmesan (more for topping)
  • ½ large onion, diced
  • 2-3 garlic cloves, minced
  • 15 oz can tomato sauce
  • 2 tbsp tomato paste
  • splash dry red wine
  • 1 tsp olive oil
  • 1 tsp salt, divided
  • 1½ tsp dried oregano, divided
  • 1 tsp dried basil, divided
  • ½ tsp dried parsley, divided
  • ½ tsp fresh ground pepper
  • ½ tsp red pepper flakes
  • 1-2 bay leaves
  • pepperonis
  • fresh basil
Instructions
  1. Preheat oven to 425.
  2. Process cauliflower into a powder-like consistency.
  3. Transfer to a small bowl and heat in microwave for 5 minutes.
  4. Transfer to a towel to dry out.
  5. Squeeze out excess water/moisture and transfer to a large bowl.
  6. Add egg, 8 oz mozzarella, Parmesan, ½ tsp salt, ½ tsp oregano, ½ tsp basil, ¼ tsp parsley and combine well.
  7. Roll out into a round pizza shape on a greased baking sheet.
  8. Bake 15-20 minutes or until desired crispiness.
  9. Meanwhile prepare sauce. Add olive oil to a medium sized saucepan over medium heat.
  10. Add onion and garlic and sauté for several minutes.
  11. Add tomato sauce, paste and red wine. Bring to boil.
  12. Stir in the rest of seasoning. Turn down to simmer.
  13. Simmer for 30 minutes stirring frequently.
  14. Remove pizza crust from oven and pour sauce over (after removing bay leaves).
  15. Top with mozzarella and pepperonis.
  16. Bake 10-12 more minutes.
  17. Top with Parmesan and fresh basil.
