Burrata Salad with Crispy Prosciutto

Ingredients
  • 4 cups arugula
  • 1 cup grape tomatoes, halved
  • 4 oz prosciutto
  • fresh burrata
  • balsamic vinaigrette store-bought or homemade (homemade: ¼ cup balsamic vinegar, 1 tbsp. brown sugar, 1 tsp. dijon mustard, ½ tsp. salt, ½ tsp. fresh ground pepper, ½ tsp. garlic powder, ¾ cup olive oil)
  • fresh ground pepper, to top
Instructions
  1. Preheat oven to 350. Line a baking sheet with parchment paper.
  2. Slice prosciutto thin, roll up and place on parchment paper.
  3. Bake for 15 minutes or until it reaches desired crispiness. Allow to cool.
  4. Mix together arugula, grape tomatoes and prosciutto.
  5. Place burrata in center.
  6. Drizzle with balsamic vinaigrette. (Homemade: mix all ingredients except olive oil in a salad dressing shaker. Add olive oil and mix well.)
  7. Top with fresh ground pepper.
