Extra Crispy Onion Rings

Ingredients
  • 2 large white onions, sliced into rings
  • 1 cup of flour
  • 2 tbsp baking powder
  • 2 tbsp paprika
  • 1 tsp salt
  • pinch of cayenne
  • 2 eggs
  • 1½ cups milk
  • 2 cups of breadcrumbs (more if needed)
  • Canola/vegetable oil
Instructions
  1. Mix together flour, baking powder, paprika, salt and cayenne.
  2. Dip the rings in the flour and shake off excess. Set aside.
  3. Whisk together eggs and milk in a large bowl.
  4. Pour in flour mixture and whisk until smooth.
  5. Dunk rings into liquid, shaking off excess then place directly into breadcrumbs.
  6. Cover will with breadcrumbs then set on a separate plate or baking sheet.
  7. Repeat with all rings.
  8. Heat oil in a deep skillet into very hot. There should be enough oil to mostly submerge rings.
  9. And rings when hot working in bunches. Don't overcrowd.
  10. Remove once golden brown or after about 5 minutes flipping halfway through.
  11. Remove to a paper towel lined plate to cool.
