Creamy Au Gratin Potatoes

Ingredients
  • 5-7 potatoes, peeled and sliced
  • ¼ cup butter
  • ¼ cup flour
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups milk (2% or whole)
  • ½ cup Parmesan cheese
  • 1 cup cheddar cheese
  • crumbled potato chips for topping
Instructions
  1. Preheat oven to 350 degrees.
  2. Boil potatoes in a large pot until fork tender. Drain.
  3. Melt butter in medium-sized saucepan over medium heat.
  4. Stir in flour, slowly, a little at a time. It will begin clumping.
  5. Stir in milk, slowly, a little at a time. It will begin to thicken.
  6. Once sauce has thickened add cheeses, salt, and pepper.
  7. Turn down heat to low and stir until cheese has melted.
  8. Remove from heat.
  9. Place potatoes in a casserole dish and pour cheese sauce over. Carefully mix to incorporate.
  10. Crumble potato chips over top of casserole.
  11. Bake for 30-35 minutes.
