Creamy Au Gratin Potatoes

- 5-7 potatoes, peeled and sliced
- ¼ cup butter
- ¼ cup flour
- 1 tsp salt
- ½ tsp pepper
- 2 cups milk (2% or whole)
- ½ cup Parmesan cheese
- 1 cup cheddar cheese
- crumbled potato chips for topping
- Preheat oven to 350 degrees.
- Boil potatoes in a large pot until fork tender. Drain.
- Melt butter in medium-sized saucepan over medium heat.
- Stir in flour, slowly, a little at a time. It will begin clumping.
- Stir in milk, slowly, a little at a time. It will begin to thicken.
- Once sauce has thickened add cheeses, salt, and pepper.
- Turn down heat to low and stir until cheese has melted.
- Remove from heat.
- Place potatoes in a casserole dish and pour cheese sauce over. Carefully mix to incorporate.
- Crumble potato chips over top of casserole.
- Bake for 30-35 minutes.
