Blueberry Muffins

Ingredients
  • 3 cup flour, divided
  • 1½ cups white sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • ⅔ cup vegetable oil
  • 2 eggs
  • ⅔ cup 2% milk
  • 2 - 2½ cups fresh blueberries, cleaned and sorted
  • ½ cup brown sugar
  • 3 tbsp melted butter
  • 1 tsp cinnamon
  • muffin tray
  • Pam or liners
Instructions
  1. Grease muffin tray or line with muffin liners.
  2. Preheat oven to 400 degrees.
  3. Using the bowl of a stand mixer (or large bowl) combine 2⅔ cup flour, sugar, baking powder and salt (by hand or on a low speed) until combined.
  4. In a small bowl whisk together oil, eggs and milk.
  5. Add liquid mixture to flour mixture and mix on a low speed (or by hand) until just combined.
  6. Carefully fold in blueberries.
  7. Pour into muffin tray until each is almost full.
  8. In another small bowl mix together remaining flour, brown sugar, cinnamon and butter (by hand works best).
  9. Crumble over muffins.
  10. Bake for 20-22 minutes.
  11. Allow to cool for a couple mins in tray.
  12. Remove to cooling rack to finish cooling.
