White Mushroom Garlic Three-Cheese Pizza

Ingredients
  • Pizza dough (homemade recipe linked in post or store-bought)
  • olive oil
  • 1 tbsp butter
  • 5 cloves of garlic, 3 minced, 2 sliced in thick pieces
  • 1 tbsp fresh oregano
  • 1 tbsp fresh thyme (as well as additional sprigs)
  • 12 oz Hen-of-the-Woods mushrooms (or similar)
  • salt & pepper
  • 8 oz freshly grated mozzarella
  • 1 cup of ricotta
  • ⅔ cup of freshly grated Parmesan
  • fresh basil
  • red pepper flakes
Instructions
  1. After preparing dough, roll out into desired shape and sit in a warm place for 10 mins on a greased pizza pan.
  2. Preheat oven to 450.
  3. Brush surface of dough with olive oil.
  4. In a medium skillet, add butter and 1 tbsp olive oil and warm over medium heat.
  5. Add minced garlic and saute for a couple minutes.
  6. Add mushrooms, oregano and thyme.
  7. Cook for 5-6 minutes stirring frequently. Add salt and pepper to taste.
  8. Top pizza crust with mozzarella.
  9. Add dollops of ricotta across surface.
  10. Top with mushroom mix.
  11. Then Parmesan.
  12. Saute large pieces of garlic in a little olive oil just for a couple minutes then place on top of Parm.
  13. Bake for 15-20 minutes or until crust crispy and cheese melted.
  14. Let cool then top with basil leaves, thyme sprigs and red pepper flakes.
