Chimichurri Steak Tacos

Ingredients
  • 1 bunch of fresh cilantro, stems cut
  • ½ bunch curly parsley, stems cut
  • ½ cup olive oil
  • ½ cup red wine vinegar
  • ½ tsp red pepper flakes (adjust based on how spicy you want it)
  • 2 garlic cloves
  • 1 tbsp cumin
  • salt & pepper
  • 1 lb steak, cut into small pieces
  • tortillas
  • refried beans, heated up in microwave
  • pico de gallo (chopped jalapeno, tomato and yellow onion)
  • crumbled feta cheese
  • crema (or sour cream)
  • fresh lime to squeeze over top (optional)
Instructions
  1. Prepare chimichurri sauce by mixing top 9 ingredients in a food processor (or bullet or blender) until smooth. Add more vinegar/OO or spices if desired.
  2. Heat skillet over medium high heat with olive oil.
  3. Add steak and cook for 3-4 minutes, stirring occasionally (or until reaches desired temp).
  4. Add half your chimichurri sauce and toss/cook into steak for another minute or two. Remove to a bowl.
  5. Meanwhile, warm tortillas in oven.
  6. Top with beans, steak, more chimichurri sauce, pico de gallo, cheese and drizzle with crema.
  7. Squeeze with lime.
