Old Fashioned Vegetable Beef Soup

- 1½ lb beef, cut into small pieces
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tbsp flour
- 2 32-oz boxes beef broth
- 1 15-oz can diced tomatoes in tomato sauce
- 1 cup water
- 3 potatoes, peeled and chopped into small pieces
- 3 carrots, peeled and chopped into small pieces
- 2 stalks celery, chopped into small pieces
- 1½ cup green beans, chopped
- 1 tbsp fresh oregano
- 1 tbsp fresh thyme
- 1 tsp dried basil
- ½ tsp dried parsley
- ½ tsp paprika
- 1 tsp salt
- 1 tsp fresh ground pepper
- 1 bay leaf
- Brown beef in a large stockpot over medium heat for about 5 mins stirring often.
- Drain most of grease.
- Add onion and garlic and saute for a few minutes.
- Throw in flour and stir to act as a thickener for soup.
- Pour in beef broth, tomatoes and water. Bring to boil.
- Add rest of ingredients and stir well.
- Turn heat down and simmer for about 1½ hours.
- Remove bay leaf and serve.
