Old Fashioned Vegetable Beef Soup

Ingredients
  • 1½ lb beef, cut into small pieces
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp flour
  • 2 32-oz boxes beef broth
  • 1 15-oz can diced tomatoes in tomato sauce
  • 1 cup water
  • 3 potatoes, peeled and chopped into small pieces
  • 3 carrots, peeled and chopped into small pieces
  • 2 stalks celery, chopped into small pieces
  • 1½ cup green beans, chopped
  • 1 tbsp fresh oregano
  • 1 tbsp fresh thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • ½ tsp paprika
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 1 bay leaf
Instructions
  1. Brown beef in a large stockpot over medium heat for about 5 mins stirring often.
  2. Drain most of grease.
  3. Add onion and garlic and saute for a few minutes.
  4. Throw in flour and stir to act as a thickener for soup.
  5. Pour in beef broth, tomatoes and water. Bring to boil.
  6. Add rest of ingredients and stir well.
  7. Turn heat down and simmer for about 1½ hours.
  8. Remove bay leaf and serve.
