Avo, Tomato & Corn Salad

Ingredients
  • ¼ cup olive oil
  • juice from one fresh lemon
  • 1 tsp salt
  • ½ tsp fresh ground pepper
  • ½ tsp cumin
  • 1½ cups grape tomatoes, halved
  • 2 avocados, pitted and chopped
  • ½ cup corn (thawed frozen corn or grilled fresh corn removed from cob)
  • ½ cucumber, chopped into wheels or half wheels
  • 1 jalapeno, minced (leave out if you don't like spice)
  • 2 tbsp fresh cilantro
Instructions
  1. Whisk together olive oil, lemon juice, salt, pepper and cumin in a small bowl. Set aside.
  2. In a medium-sized salad bowl, mix together rest of ingredients.
  3. Drizzle dressing over top and mix.
  4. Serve right away or chill in refrigerator.
