Spicy Thai Chili Pepper Ramen with Shrimp

Serves: 4-6
- 2 packages of ramen noodles (discard season packets)
- 1½ tbsp butter
- 3 garlic cloves, minced
- 10-12 shrimp (or about 1 lb), peeled and deveined
- 1 tbsp sesame oil (more if needed)
- 1 small shallot, minced
- ½ tsp Thai Chili Peppers, diced
- ½ cup Baby Bella (or similar) mushrooms, sliced
- 1 red bell pepper, sliced into thin strips
- ½ cup soy sauce (I use reduced sodium)
- 1 tsp mirin
- juice from one lime
- 1 tbsp brown sugar
- Prepare ramen according to package directions but discard season. Drain once cooked.
- Heat butter in a large pan or skillet over medium heat.
- Once melted add garlic and saute for a couple mins.
- Add shrimp and cook 3 minutes per side. Remove to a bowl and keep warm.
- In same pan add sesame oil and heat.
- Add shallot and Thai Chilies and saute for a couple mins.
- Add mushrooms and red pepper and saute about 5 more.
- Stir in soy sauce, mirin and lime juice. Bring to a slight boil, reduce heat and simmer 5 mins.
- Stir in brown sugar. Turn off heat once dissolved.
- Add ramen and shrimp to sauce and toss well.
