Brussels Sprouts with Bacon and Goat Cheese

Ingredients
  • 1 lb Brussels Sprouts
  • 4 slices bacon
  • ½ tsp ground thyme
  • 1 tsp salt
  • ½ tsp fresh ground pepper
  • 4 oz crumbled goat cheese
  • ¼ cup dried cranberries
Instructions
  1. Blanch Brussels Sprouts by boiling in a pot of water for about 5 minutes. Drain and rinse with cold water.
  2. Meanwhile fry bacon in a large skillet - about 8-12 minutes or until reaches desired crispiness. Remove to a paper towel to cool.
  3. Reserve 1 tbsp bacon grease.
  4. Trim and half the Brussels.
  5. Add to bacon grease over medium heat, season with thyme, salt and pepper.
  6. Saute for about 8-10 minutes.
  7. Transfer to a large serving bowl and combine with bacon, crumbled goat cheese and cranberries,
