Easy Beef Stew

Ingredients
  • 2 lb stew meat (or shoulder/chuck roast), cut up into small pieces, fat trimmed
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 64 oz beef broth
  • 32 oz can tomato sauce
  • 1 tbsp oregano
  • ½ tsp thyme
  • 1 tsp salt
  • ½ tsp ground pepper
  • 1 bay leaf
  • 2-3 carrots, peeled and chopped
  • 3-4 potatoes, peeled and chopped
  • 1 tbsp fresh cilantro, chopped
Instructions
  1. Toss beef with flour in large bowl shaking off excess.
  2. Heat olive oil in a large pot over medium heat.
  3. Add beef and brown, stirring frequently for about 3-4 minutes.
  4. Add onion and cook with beef about 5 more on medium-low heat.
  5. Add garlic and cook 1-2 more minutes.
  6. Pour in beef broth and tomato sauce, stirring well and scrapping anything that might have stuck to pot.
  7. Bring to a boil, reduce heat to low and stir in spices and bay leaf.
  8. Stir in potatoes and carrots.
  9. Simmer on low for 1½ hours.
  10. Toss in cilantro and stir well. Adjust spice as needed.
