Easy Breakfast Casserole with Chorizo

Ingredients
  • nonstick cooking spray
  • 9 oz Chorizo sausage (ground or links with casing removed)
  • 1 small onion, diced
  • 1 red bell pepper or 3-4 small mini bell peppers, diced
  • 1 fresh poblano chile pepper, chopped
  • 1 cup grape tomatoes, chopped
  • 3-4 cloves of garlic, minced
  • 12 eggs
  • ½ cup whole milk
  • ½ tsp chili powder
  • ¼ tsp cumin
  • ¼ tsp red pepper flakes
  • ¼ tsp salt
  • ¼ tsp ground pepper
  • 1 cup shredded Mexican cheese (or mix of cheddar, Monetary Jack and Peppermint), divided
  • 2 tbsp fresh cilantro, chopped
  • hot sauce, taco sauce, avocado, cilantro or tomato to top
Instructions
  1. Preheat oven to 450 and spray 9x13 baking dish with nonstick spray.
  2. Cook chorizo in large skillet over medium heat until almost brown.
  3. Stir in onion and peppers. Saute for 5 minutes.
  4. Add tomatoes and garlic and saute a couple more.
  5. Drain off any excess fat.
  6. Meanwhile, in a large bowl whisk together eggs, milk and spices.
  7. Stir in ½ cup cheese and cilantro.
  8. Pour sausage mix into a baking dish.
  9. Top with egg mix.
  10. Top with rest of cheese.
  11. Bake for 15-20 minutes or until set.
  12. Cool then slice and serve.
