Asparagus Salad with Peas, Tomatoes & Peppers

Ingredients
  • 1 large bunch of asparagus, ends removed and chopped
  • 2 cups arugula
  • 2 cups spinach
  • ½ cup peas
  • ½ cup chopped bell pepper
  • 1 cup cherry tomatoes, halved
  • juice from one lemon,
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • ¼ cup olive oil
  • salt and pepper, to taste
Instructions
  1. Bring a large pot of water to boil.
  2. Add asparagus and cook 4 minutes.
  3. Remove to a strainer and rinse with cold water to blanch.
  4. Add arugula and spinach to a large bowl.
  5. Top with asparagus, peas, peppers and tomatoes.
  6. Meanwhile, in a small bowl or salad dressing shaker mix together lemon juice, vinegar, mustard, olive oil, salt and pepper.
  7. Toss salad with dressing.
