Ground Beef & Rice Stuffed Peppers

- 6 large bell peppers, tops cut off and seeds removed from inside
- 1 lb ground beef (I use 90-96% fat free)
- 1 yellow onion, diced
- 4-5 garlic cloves, minced
- 1 - 32 oz can tomato sauce
- 1 cup water
- 1 tbsp chili powder
- 2 tsp cumin
- ½ tsp red pepper flakes
- ½ tsp salt
- ½ tsp pepper
- 1 cup rice (brown or white)
- Monetary Jack cheese, for topping
- Preheat oven to 400 degrees.
- Cook rice in a rice cooker or according to package directions.
- In a large skillet, brown ground beef.
- Drain off almost all grease and add onion. Saute for 5 minutes.
- Add garlic and saute one more.
- Pour in tomato sauce and water, stirring well.
- Bring to a slight boil then stir in spices.
- Cover, turn down heat and simmer for 20 minutes.
- Stir in rice and mix well.
- Stuff peppers with ground beef and rice mixture.
- Top with cheese.
- Place in a baking dish and cover with foil.
- Cook for 30 minutes, remove foil and cook 10 more.
