Ground Beef & Rice Stuffed Peppers

Ingredients
  • 6 large bell peppers, tops cut off and seeds removed from inside
  • 1 lb ground beef (I use 90-96% fat free)
  • 1 yellow onion, diced
  • 4-5 garlic cloves, minced
  • 1 - 32 oz can tomato sauce
  • 1 cup water
  • 1 tbsp chili powder
  • 2 tsp cumin
  • ½ tsp red pepper flakes
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup rice (brown or white)
  • Monetary Jack cheese, for topping
Instructions
  1. Preheat oven to 400 degrees.
  2. Cook rice in a rice cooker or according to package directions.
  3. In a large skillet, brown ground beef.
  4. Drain off almost all grease and add onion. Saute for 5 minutes.
  5. Add garlic and saute one more.
  6. Pour in tomato sauce and water, stirring well.
  7. Bring to a slight boil then stir in spices.
  8. Cover, turn down heat and simmer for 20 minutes.
  9. Stir in rice and mix well.
  10. Stuff peppers with ground beef and rice mixture.
  11. Top with cheese.
  12. Place in a baking dish and cover with foil.
  13. Cook for 30 minutes, remove foil and cook 10 more.
