Mexican Street Corn

Ingredients
  • olive oil, for brushing grill
  • 1 tsp. chili powder
  • ½ tsp. ground cayenne
  • ½ tsp. ground cilantro
  • ½ tsp. cumin
  • 1 tsp. salt
  • 1 tsp. pepper
  • 8 ears of corn, husked
  • ½ cup butter, melted
  • ½ cup crumbled feta
  • 1 lime, cut into 8 wedges
Instructions
  1. Warm grill to high heat and brush with olive oil.
  2. Mix together spices in a small bowl.
  3. Brush ears of corn with butter and sprinkle with salt and pepper.
  4. Grill corn, turning occasionally, for about 10 minutes.
  5. Remove from grill and immediately brush with butter.
  6. Sprinkle each ear with 1 tbs. feta.
  7. Sprinkle each ear with ½ tsp. spice mixture.
  8. Squeeze 1 lime wedge over each ear.
