Pork Chops

Ingredients
  • 4-5 small pork chops
  • ⅓ cup flour
  • 2 eggs
  • 1 tbsp. milk
  • 1 cup breadcrumbs
  • 1 tbsp. fresh thyme
  • 1 tbsp. fresh parsley
  • 1 tbsp. olive oil
Instructions
  1. Preheat oven to 375 degrees.
  2. Trim fat off pork chops.
  3. Place flour in a small bowl.
  4. Whisk eggs and milk together in another small bowl.
  5. In a third bowl or plate mix together bread crumbs and herbs.
  6. Heat olive oil in a medium-large saucepan over medium heat.
  7. Coat each chop in flour, shaking off excess.
  8. Next coat in the egg/milk mixture, shaking off excess.
  9. Last coat with breadcrumb/herb mixture.
  10. Sear each chop for 2 minutes per side.
  11. Place all chops in a large baking dish.
  12. Add some water and place the dish in the oven.
  13. Cook for an hour and a half, continuing to add water to the dish so they don't burn.
