Stuffed Pepper Casserole

Ingredients
  • 1 lb ground beef (90-96% fat free)
  • 2 cloves garlic, minced
  • ¼ cup yellow onion, diced
  • ½ cup green pepper, chopped
  • ¾ of a 28 oz can tomato sauce
  • 1 cup rice (dry)
  • ½ tsp. ground cayenne
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. ground pepper
  • 2 tbsp. Parmesan cheese
Instructions
  1. Preheat oven to 375 degrees.
  2. Prepare rice according to package directions.
  3. Brown ground beef in a large skillet over medium heat.
  4. Add garlic, onion, and green pepper and sauté for 5 minutes.
  5. Add tomato sauce and stir.
  6. Once rice is cooked mix together with ground beef mixture in a medium-sized baking dish.
  7. Sprinkle Parmesan or shredded cheddar cheese over the top.
  8. Bake for one hour.
