Ma the Meatloaf

Ingredients
  • 1 lb ground chuck
  • ½ lb ground pork
  • ½ medium sized white onion, diced
  • 2-3 garlic cloves, minced
  • 1 egg
  • 1 cup breadcrumbs
  • ½ cup ketchup
  • 1 tsp. oregano
  • ½ tsp. chili powder
  • ½ tsp. paprika
  • 1 tsp. salt
  • ¼ tsp. cayenne
  • ½ tsp. dry mustard
  • ½ tsp. pepper
  • 2 beef bullion cubes
  • 2 tbsp. flour
  • ⅓ cup cold water
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large bowl mix together beef, pork, onions, garlic, breadcrumbs, ketchup, egg, chili powder, oregano, paprika, salt, cayenne, dry mustard, and pepper together. (If it feels too dry add more ketchup, if too moist add more breadcrumbs.)
  3. Form into a loaf-like shape and place in a large baking dish. Spread ketchup over the top. Add a little water and a beef bullion cube to the dish.
  4. Place in oven and bake 1½ hours. Check occasionally and add water as it evaporates off.
  5. Remove from oven when done and allow to cool while preparing gravy.
  6. Prepare mixture of cold water and flour in a small bowl. It should form a gravy-like consistency. Add more flour/water as necessary.
  7. Pour sauce from pan into a small saucepan and bring to boil.
  8. Add a beef bullion cube and stir to dissolve.
  9. Add flour/water mixture to gently boiling sauce, stirring constantly until dissolved.
  10. Turn down heat to low and simmer for about 3-5 minutes.
  11. Slice meatloaf and pour gravy over top.
