Traditional Bruschetta

- 1 baguette, sliced into ⅓ inch slices
- ½ cup olive oil
- 1 tsp. garlic, minced
- 2-3 roma tomatoes. diced
- ¼ cup fresh basil, sliced
- 4 oz fresh mozzarella, chopped into small pieces
- 2 tbsp. balsamic vinegar
- ½ tsp. salt
- ½ tsp. pepper
- Parmesan for topping
- Preheat oven to 350 degrees.
- Rub both sides of crostinis with olive oil.
- Bake for 15-20 minutes or until fully toasted and crispy.
- In a small bowl mix together tomatoes, basil, mozzarella, balsamic vinegar, salt, and pepper.
- Allow to sit for 10 minutes.
- Spoon a small amount on each crostini.
- Bake for another 3-5 minutes or until cheese has melted.
- Top with Parmesan.
