Sparkling Amore

- 1 cup sugar
- ½ cup water
- 1 tsp. lemon zest
- 6 large sprigs fresh Rosemary
- ¼ cup fresh lemon juice
- 1 bottle Prosecco
- Bring sugar and water to boil in a small saucepan over high heat.
- Add lemon zest and 2 of the rosemary sprigs. Stir.
- Reduce heat and simmer for about 5 minutes.
- Remove from heat, discard lemon zest and rosemary and stir in lemon juice.
- Allow to cool to room temperature.
- Place in freezer until almost frozen/slushy consistency.
- Spoon 1-2 tsp. of the mixture into each champagne flute.
- Top with Prosecco.
- Garnish with rosemary sprig.
