Sparkling Amore

Ingredients
  • 1 cup sugar
  • ½ cup water
  • 1 tsp. lemon zest
  • 6 large sprigs fresh Rosemary
  • ¼ cup fresh lemon juice
  • 1 bottle Prosecco
Instructions
  1. Bring sugar and water to boil in a small saucepan over high heat.
  2. Add lemon zest and 2 of the rosemary sprigs. Stir.
  3. Reduce heat and simmer for about 5 minutes.
  4. Remove from heat, discard lemon zest and rosemary and stir in lemon juice.
  5. Allow to cool to room temperature.
  6. Place in freezer until almost frozen/slushy consistency.
  7. Spoon 1-2 tsp. of the mixture into each champagne flute.
  8. Top with Prosecco.
  9. Garnish with rosemary sprig.
