Mama G's Mac & Cheese

- ¾ - 16oz box of macaroni
- 3 tbsp. butter
- 2 tbsp. flour
- 2 cups heavy whipping cream
- 2 cups cubed cheddar cheese
- ¼ cup yellow onion, diced
- 1 chicken bullion cube
- 1 tsp. dry mustard
- ½ tsp. salt
- ¼ tsp. ground pepper
- 1 tbsp. breadcrumbs
- Preheat oven to 350 degrees.
- Cook pasta according to package directions. Drain but don't rinse.
- While pasta is cooking prepare sauce.
- Melt butter in a medium-sized saucepan over medium heat.
- Add onion and sauté until tender (3-4 minutes).
- Add flour, salt, and pepper and stir until dissolved.
- Add cream and cook for a couple minutes.
- Add chicken bullion and dry mustard. Stir to dissolve.
- Once mixture is bubbly and has thickened add cheese and turn off heat.
- Stir until cheese has melted and fully incorporated.
- Spray a baking dish with nonstick spray.
- Dump in macaroni using a spatula to break up.
- Pour cheese sauce over pasta stirring slightly to coat.
- Top with breadcrumbs.
- Bake for 35 minutes.
- Allow to cool before serving.
