Chickpea Salad

Ingredients
  • 2 cans chickpeas/garbanzo beans, drained and rinsed
  • 1 red bell pepper, seeded and chopped
  • ½ cup grape tomatoes, halved
  • 1 cucumber, chopped
  • 2 tbsp. fresh parsley, chopped
  • juice of one large lemon
  • 1½ tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. oregano
  • ½ tsp. paprika
  • 3 tbsp. feta cheese, reduced fat
Instructions
  1. Add all ingredients to a large bowl and toss. Store in fridge.
