Cajun Shrimp Skewers

Ingredients
  • 1½ lb shrimp (peeled and deveined)
  • 1 tbsp. olive oil + 1 tsp. olive oil
  • 1 tbsp. fresh lemon juice
  • 1 tsp. garlic powder
  • 1 tbsp. Cajun seasoning
  • 1 tsp. salt
  • ½ tsp. ground pepper
  • 2 bell peppers (red, yellow, orange or green), sliced
  • 1 large onion, sliced
  • wooden skewers
Instructions
  1. Heat grill to medium/high.
  2. Drizzle shrimp with 1 tbsp. olive oil and lemon juice.
  3. Toss with garlic powder, Cajun seasoning, salt and pepper.
  4. Toss peppers and onion with 1 tsp. olive oil, salt and pepper.
  5. Skewer shrimp with peppers and onion slices in between.
  6. Grill for about 2-3 minutes per side.
