Deviled Eggs

Happy Easter everyone! As a kid Easter was always one of my favorite holidays. Not because of the Easter bunny, because I stopped believing in the bunny and Santa as a pretty young age thanks to my dad. As a child he permanently had a video camera attached to his hand (literally my entire childhood is on VHS) and during one of his videos he was taping my mom wrapping Christmas presents and "Santa's workshop". I happened to see this video when I was little and still remember to this day walking up to my dad, who was vacuuming at the time, and asking if Santa was real. Like most dads, he got flustered, said "of course he's real!" and then sent me to talk to my mom who told me the truth. But in order to keep Easter exciting (and my mom from killing him) instead of just simply hiding my Easter basket my dad would make a huge scavenger hunt of rhyming clues around (and even outside of) the house that took most of the morning (and probably a week+ of his time to orchestrate) leading to my basket which made Easter even that much more fun! Another great memory I have is of my cousin Jessica shoving plastic eggs down her pants (when she was middle-high school age) in order to win an Easter egg hunt. Easter to me today still includes family and candy, however it is also not complete without Deviled Eggs. Especially Brad's. They have the perfect combination of flavor and consistency.

**For the perfect hard boiled eggs you place eggs in a pot and just cover with water. Add a little salt. Bring to boil and once at a full boil, cover and turn off the heat on the burner. Leave them alone for about 10 minutes. Once complete, drain water from the pot and cover eggs with cold water (ice also helps). Allow them to sit for a few minutes or until no longer hot.**

Peel eggs, slice in half and remove yolks to a bowl. Add mayo, mustard, paprika, cayenne and chili powder and mix well. I like to transfer the mixture to a sandwich bag with the edge cut off and squeeze into the halved eggs. Top with paprika and serve!

Ingredients
  • 12 eggs hard boiled (directions in post)
  • ½ cup mayo
  • 2 tsp. yellow mustard
  • ½ tsp. paprika
  • ¼ tsp. cayenne
  • ¼ tsp. chili powder
  • ¼ tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Half your hard boiled eggs and remove yolk to bowl.
  2. Add other ingredients and mix.
  3. Transfer to a sandwich bag with tip cut off and squeeze into halved eggs.
  4. Top with paprika.
