It's officially spring which means you'll start finding rhubarb in your local grocery stores! Although here in Ohio it sure does not feel like spring. I woke up this morning to snow on the ground! It seems like winter is never ending, but at least I have this warm-weather approved cocktail to sip on to trick my mind into thinking its not bitterly miserable out. You will need rhubarb purée, vodka, lemon juice, basil, strawberries and club soda or champagne.

Chop a couple stalks of rhubarb into thin slices. In a small saucepan over high heat add sugar and water and stir until dissolved. Turn down heat and add rhubarb. Stir occasionally for 5-10 minutes. Transfer to a food processor or bullet and pulse until smooth. Allow to cool. The rhubarb has a delicious tart-sour taste but the sugar balances it out.

In a shaker add vodka, purée, lemon juice, basil leaves and strawberries. Muddle the basil and strawberries into the liquid. Add ice and shake for 30 seconds. Strain into a glass with fresh ice. Top with club soda or champagne - your choice! I like to garnish with more basil and edible flowers. Cheers!

Ingredients
  • 1.5 oz vodka
  • 3 tsp. rhubarb purée (see instructions in post
  • 0.5 oz lemon juice
  • 3-4 basil leaves
  • 2-3 strawberries, sliced
  • club soda or champagne
  • garnish: basil leaves, edible flowers
Instructions
  1. Add vodka, lemon juice, purée, basil and strawberries to a shaker. Muddle.
  2. Add ice and shake for 30 seconds.
  3. Strain into a glass with fresh ice.
  4. Top with champagne or club soda.
  5. Garnish.
