Queso Blanco

It's Super Bowl Sunday and my husband's birthday! We celebrated last night with dinner at Refectory and out for drinks and today I'm making him some of his favorite foods for the game. There's lots of Super Bowl-appropriate recipes on here whether you're hosting or need something quick to bring to a party! This Queso Blanco is the perfect indulgent dip for this once a year occasion.

You will need evaporated milk, flour, white American cheese, mozzarella, chopped green chilies, chili powder, cumin, red pepper flakes, salt, pepper, cilantro and  jalapeños. Be sure to purchase fresh cheese it makes a huge difference.

In a skillet or small saucepan (note: I used a cast iron, but I'd recommend making it in a regular nonstick saucepan and then transferring to the cast iron skillet at the end) heat evaporated milk over medium heat.

Stir in your flour. Whisk well to combine. The mixture will almost begin to slightly boil. Reduce heat to simmer.

Start adding your cheese a little at a time. Begin with white American. I buy slices and then cut into small squares. Increase heat to medium. Whisk the entire time you're adding cheese so it melts and combines evenly. Add more cheese and continue. Once all American is added, add your mozzarella and do the same.

Once all cheese has melted and combined stir in your chilies. Whisk again to combine.

Stir in your spices. Mix well.

Transfer to a cast iron skillet and broil for about two minutes at the end.

Top with fresh jalapeños and cilantro.

Serve with tortilla chips, pita chips, pretzels... whatever your little heart desires. My homemade tortilla chips are pictured in this post. I will share the recipe for them shortly. They're super easy. Store bought works fine as well though!

Serves: 6-8
Ingredients
  • 1 12 oz can evaporated milk
  • 1 tablespoon flour
  • ¾-1 lb white American cheese (fresh from deli), sliced into small pieces
  • 4 oz fresh mozzarella, sliced into small pieces
  • 1 tablespoon diced green chilies (canned)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon fresh ground pepper
  • fresh jalapeños (garnish)
  • fresh cilantro (garnish)
Instructions
  1. Preheat oven to broil.
  2. In a small saucepan heat milk over medium heat.
  3. Whisk in flour. Bring almost to a boil then turn down heat to simmer.
  4. Whisk American cheese in slowly, a little at a time. Increase heat to medium. Whisk entire time.
  5. Once all American cheese is added, repeat with mozzarella.
  6. Add green chilies, stir to combine.
  7. Add spices, stir to combine.
  8. Broil for two minutes.
  9. Top with jalapeños and cilantro.
  10. Serve with tortilla chips/pita chips/pretzels.
