Reuben Sandwich

Hope you're all hanging in there trapped in your houses! If you've been following along on my Instagram I've been sharing restaurants that are still offering carryout or delivery options. Please help support them during this time! I've also been sharing easy "pantry" recipes with ingredients you might already have to avoid the crazy, bare grocery stores. Sunday I shared an simple cocktail (see below/whiskey recipes), Monday you might have seen me cooking what I called a "pantry" soup on my story which is completely customizable based on your pantry/fridge, yesterday my Corned Beef for St. Patrick's Day (recipe already on here under beef/crockpot and also below), and today I'd like to share this tasty, traditional Reuben recipe!

You only need five ingredients for this recipe, and it stays in the spirit of St Patrick's Day week! If you made corned beef, usually depending on the size of the meat/your family you'll probably have leftovers. Brad and I always buy a big piece so we have lots of leftovers for Reubens! I love Corned Beef but Reubens are my fav! You'll also need rye bread, Swiss cheese, sauerkraut, Thousand Island dressing and a little butter.

Corned Beef

Butter one side of each slice of bread. Build your sandwich by spreading 1000 Island on one piece of Rye. I also add mustard to mine. Top with Swiss cheese, Corned Beef then sauerkraut.

Add to a skillet sprayed with nonstick over medium heat. Once the bottom is toasted to desired brownness, flip and repeat on other side.

Cheese should be nice and melty! Slice in half and serve. Hang in there!!

Serves: 1
Ingredients
  • Corned beef (see recipe in post)
  • Rye bread
  • Swiss cheese
  • Sauerkraut
  • 1000 Island Dressing
  • butter/nonstick spray
Instructions
  1. Butter one side of each slice of bread.
  2. Heat small skillet over medium heat. Spray with nonstick.
  3. Spread 1000 Island on opposite of buttered side.
  4. Top with Swiss, corned beef and sauerkraut.
  5. Top with other slice of bread.
  6. Add to skillet. When bottom is nicely browned, flip and repeat until cheese is nice and melty.
