Chipotle Black Beans

Ever since college I very rarely eat fast food. The only times I pick it up these days are on road trips, when in the middle of a move, and when I'm super hungover. The more time I've spent in the kitchen cooking the less and less appealing fast food has become over the years. The one exception to that is Chipotle. I can eat Chipotle anytime. However, this isn't exactly the most healthy. One day I decided to make my own version at home inspired by all my favorite Chipotle toppings, and I have to tell you, once I perfected my at-home version I actually like it better than Chipotle's. I know that is a bold statement, but it's true! I've already shared with you my Cilantro-Lime Rice recipe, which is just like Chipotle's rice (see recipe below), so here's another one! Chipotle Black Beans.

Cilantro-Lime Rice

To make my Chipotle Black Beans copycat recipe you will need a can of black beans (half drained), lime juice, chili powder, cumin, Jamaican Allspice, ground cloves, salt, a garlic clove, and sugar.

Simply add beans to a small saucepan over medium heat. Add rest of ingredients and stir to incorporate. Heat for about 3 minutes stirring every now and then. Serve hot on top of tacos or salad or as a hearty side. Enjoy! And expect to see many more Chipotle-inspired recipes. 🙂

Ingredients
  • 1 15 oz can black beans, partially drained
  • 1 tsp. fresh lime juice
  • 1 tsp. chili powder
  • ¼ tsp. cumin
  • ⅛ tsp. allspice
  • ⅛ tsp. ground cloves
  • ½ tsp. salt
  • ¼ tsp. sugar
  • 1 garlic clove, minced
Instructions
  1. Add beans to small saucepan over medium heat.
  2. Add rest of ingredients and stir to incorporate.
  3. Heat for about 3 minutes, stirring every now and then or until beans are warm.
  4. Serve as a side or over tacos/salad.
