Dragon Fruit Mojito

Happy Valentine's Day everyone! While I was brainstorming what cocktail I wanted to shake up to celebrate the holiday and snow was falling outside my window I immediately decided I needed something to transport me some place warmer. Figuratively of course. I'm pretty sure if I created a cocktail that could actually do that I'd be the richest person in the world. Here's to dreaming.

One cocktail that immediately has me imaging the sun, sand and sound of the waves crashing in is the mojito. So I pulled out my bottle of Private Select Spiced Rum we brought home from St Lucia and start mixing. I like the idea of incorporating this gorgeous dragon fruit into the drink. And to make it more Valentine's Day themed I topped it off with some sparkling rosé.

Dragon Fruit Mojito

Serves: 1
Ingredients
  • 2 oz spiced rum
  • 0.75 oz simple syrup
  • 0.5 oz fresh lime juice
  • half of a dragon fruit (cut in half and scoop out one side)
  • 4-5 fresh mint leaves
  • sparkling rosé to top
  • ice
Instructions
  1. Add rum, syrup, lime juice, dragon fruit and mint to a shaker.
  2. Muddle mint and dragon fruit down into the liquid well.
  3. Add ice and shake for 60 seconds.
  4. Strain into a glass with fresh ice.
  5. Top with rosé.
  6. Garnish with dragon fruit and mint.
