Goat Cheese & Prosciutto Crostini

I just love crostinis. You can put just about anything on them and suddenly you've got yourself fancy little hors d'oeuvre. Chrissy Teigen has a chapter in Cravings called Shit on Toast, and honestly I really appreciate that. However, I prefer shit on crostinis. They're like classier, bite-sized toasts.

Pick up a fresh loaf of Ciabatta. French baguettes work just as well, but I like to pair prosciutto with Ciabatta, because Italy. Preheat oven to 400 and brush slices of ciabatta with olive oil. Bake for about 10 minutes. Spread with goat cheese, drizzle with a little honey, layer on prosciutto, then top with rainbow micro greens for a peppery flavor and a pop of color. Drizzle with a balsamic glaze and you're all finished!

**Note: heating honey up for about 10 seconds in the microwave makes it a lot easier to drizzle!**

You've got yourself an easy but impressive appetizer! Or you can be like me and just make these for lunch LOL enjoy!

Goat Cheese & Prosciutto Crostini

Serves: 12
Ingredients
  • 1 thin fresh loaf of ciabatta, sliced into ½ inch slices
  • olive oil
  • 8 oz good quality goat cheese
  • ¼ cup honey
  • 4 oz prosciutto, sliced and rolled
  • rainbow micro greens or arugula micro greens
  • ½ cup balsamic vinegar
  • ¼ cup brown sugar
Instructions
  1. Preheat oven to 400 degrees.
  2. Brush both sides of ciabatta slices with olive oil
  3. Bake for about 10 minutes or until crispy.
  4. Meanwhile, prepare balsamic glaze. Add balsamic vinegar and brown sugar to a small saucepan.
  5. Bring to boil over high heat then turn down to simmer for 5-8 minutes or until it has thickened and reduced by half.
  6. Allow ciabatta to cool just slightly.
  7. Spread with goat cheese.
  8. Drizzle with honey.
  9. Layer on prosciutto.
  10. Top with micro greens.
  11. Drizzle with balsamic glaze.
