Irish Mojito

What a crazy past couple weeks it has been! No matter where you are I'm sure a great deal of your conversations and what is flashing across your TVs and devices is about COVID-19. I won't make you read about it here too, but I'll just say stay healthy and please practice social distancing! Even if you're not high risk you might expose someone who is. I so feel for small local businesses who are struggling due to this. Check my instagram for constant updates on how to support them during this time. Every year we head out to all the St. Patrick's Day parties around town, but with the global pandemic and high risk family members we decided to stay in this year and have our own celebration at home. I still made car bombs, Irish aspirins and this cocktail! The Irish Mojito.

This is a spin on the regular mojito but made with Jameson instead! Try one out at home tonight for a DIY Sunday Funday! Or save this recipe for Tuesday on actual St Patrick's Day. Cheers and wash your hands!!

Serves: 1
Ingredients
  • 1.5 oz Jameson
  • 0.5 oz simple syrup
  • 0.5 oz fresh lime juice
  • a few slices of cucumber
  • fresh mint
Instructions
  1. Add all ingredients to a shaker.
  2. Muddle mint and cucumber into liquid.
  3. Add ice, shake for 30 seconds and strain into a glass with fresh ice.
  4. Garnish with more mint.
