Mascarpone Orecchiette with Italian Sausage

If you're looking for a recipe that is indulgent and creamy with fresh herbs and a slight kick - you've come to the right place. This Mascarpone Orecchiette with Italian Sausage encompasses all of those things. And more. It's bomb and you should make it right now.

I mean just look at this beauty.

You shall need olive oil, onion, garlic, Italian sausage (I used hot but pick your poison), cannellini beans, fresh oregano, parsley, red pepper flakes, salt, pepper, Mascarpone cheese and Orecchiette pasta.

Cook pasta according to package directions and drain reserving 1 cup of water. Saute onion and garlic in olive oil.

Add sausage and cook through breaking up with your spatula.

Toss in your beans and oregano and cook a few minutes, mixing to incorporate. Add your spices and cook a couple more. Then add your cup of pasta water, stirring. Cook another minute.

Add your cheese. I use the whole damn container. It's sooo good. If you've never had Mascarpone it's similar in consistency to cream cheese but Italian AF. Stir until melted and combined.

Add your pasta and mix well to incorporate all the flavors and goodness.

Plate it up!

But don't forget to sprinkle with some fresh Parm.

I like to pair this wine with a dry white or a spicy Spanish red. Enjoy!

Serves: 4
Ingredients
  • 1 lb Orechiette pasta
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4-5 garlic cloves, minced
  • 3 Italian sausages, casings removed
  • 1 can cannellini beans, drained and rinsed
  • 3 tablespoon fresh oregano, chopped
  • ½ teaspoon ground parsley
  • ¼ teaspoon red pepper flakes (more if you like spice)
  • 1 teaspoon salt
  • ½ teaspoon fresh ground pepper
  • 1 cup pasta water
  • 1 - 8 oz container Mascarpone cheese
  • fresh Parmesan to top
Instructions
  1. Cook pasta according to package directions. Once cooked drain, but reserved 1 cup of water.
  2. In a large skillet over medium heat add olive oil.
  3. Once hot add onion. Saute a few minutes.
  4. Add garlic and saute 1 more.
  5. Add sausage and cook through, breaking up with spatula. About 10 minutes.
  6. Add beans and oregano. Stir to incorporate and cook a couple minutes.
  7. Add spices and cook a couple more.
  8. Pour in pasta water and stir well.
  9. Add cheese and stir until incorporated and creamy.
  10. Pour in cooked pasta and mix until all ingredients are combined.
  11. Plate and top with fresh Parm.

    This is exactly the type of meal I love to eat this time of year. Love that you used mascarpone to make it creamy too! Yum!

      Thank you! Same here. Cream cheese is typically my go-to creamy cheese, but I loved mascarpone in this dish!
