Quick Taco Salad

Tomorrow is Friday! woooo! And if you live in Columbus, Ohio like me its also Memorial Tournament weekend which is always a party. If you're going maybe I'll see ya there! Before the craziness of the weekend begins I'd love to share with you a super quick week night recipe... my (actually Brad's) quick taco salads! I always ask him to make these (or his chimichurri steak tacos - also coming) when I fly home from New York. For this speedy recipe you'll need ground beef, lettuce, avocado, taco sauce (Taco Bell bottles theirs - you're welcome), Doritos, shredded cheese and a spice mixture of chili powder, cumin, paprika, red pepper flakes, oregano, onion powder, garlic powder, oregano, salt and pepper.

Brown ground beef and drain off fat. Add water and spice mixture. Stir, bring to boil and simmer until liquid has evaporated off.

Serve ground beef, avocado and cheese over lettuce. Drizzle with taco sauce and sprinkle with crushed Doritos. Enjoy my little Mexican fans!

Serves: 4
Ingredients
  • 1 lb ground beef
  • 1 head lettuce, chopped
  • 1 avocado, sliced
  • 1 cup of cheese (i.e. Monetary), shredded
  • 1 tbsp. chili powder
  • ½ tbsp. cumin
  • 1 tsp. paprika
  • ½ tsp. red pepper flakes
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. oregano
  • 1 tsp. salt
  • ½ tsp. pepper
  • taco sauce
  • 1 small bag of Dorito's, crushed
Instructions
  1. Brown ground beef over medium heat.
  2. Drain grease.
  3. Add spices and combine.
  4. Add 1 cup of water, bring to boil, reduce heat to simmer for 5 mins or until water evaporates off.
  5. Serve ground beef, avocado, and cheese over lettuce.
  6. Drizzle with taco sauce.
  7. Top with Doritos.
