Shrimp & Veggie Skewers

It's Memorial Day Weekend AND it's actually sunny and gorgeous outside! After a week full of chilly temperatures and nonstop rain, this is a welcome change of pace! If you're like my family, this weekend involves a lot of grilling out! This weekend also generally includes a lot of travel, but that isn't happening this year. On the bright side, that just means more time to try out new recipes! Like this one! Shrimp Skewers on the grill just taste like summer. They're also light and healthy, yet filling and flavorful.

Start by tossing your shrimp in some olive oil and then adding your favorite spices. For this recipe, I decided to use the Seafood Rub from A Cajun Life. I was lucky enough to have A Cajun Life send me some samples of their various rubs and seasonings and have been experimenting with them on different types of meat and seafood. I've been very impressed with how delicious they are! A Cajun Life is a brand who started out in Louisiana and whose mission is to bring authentic Cajun food to people around the world. After traveling to New Orleans almost exactly one year ago, I fell in love with Cajun food, so I was very excited to try out these products!

You'll also want to toss your veggies with some olive oil and season them. For this recipe I used onions, zucchini, carrots and red pepper, but you can use whatever vegetables you like or have on hand! As long as they can go on a skewer - you're good! I also tossed them with some red wine vinegar, salt, pepper and paprika. Skewer your veggies and shrimp and grill!

Grill for about 2-3 minutes per side. Allow to cool before enjoying. I hope you all have a fabulous Memorial Day Weekend!

Shrimp & Veggie Skewers

Serves: 3-4
Ingredients
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoon olive oil, divided
  • 1 tablespoon A Cajun Life Seafood Rub (or your favorite Cajun seasoning)
  • 1 onion, sliced into thick pieces
  • 1 zucchini, sliced into rounds
  • 2 carrots, peeled and sliced into rounds
  • 1 red pepper, sliced into thick pieces
  • 1 teaspoon red wine vinegar
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon fresh ground pepper

Instructions
  1. Toss shrimp in half of the olive oil.
  2. Toss shrimp with Cajun season and set aside.
  3. Add veggies to a large bowl and toss with remaining olive oil.
  4. Toss veggies with red wine vinegar, paprika, salt and pepper.
  5. Add veggies and shrimp to skewers.
  6. Grill over medium-high heat about 3 minutes per side.
