Spicy Cheddar Egg Muffins with Roasted Red Peppers & Spinach

Everyone says breakfast is the most important meal of the day, but who has time or energy to make it before work? It takes all my energy to not hit snooze 500 times, work out (most days) and make myself somewhat presentable to be at the office on time. That's where these little guys come in handy. You can meal prep them ahead of time, store in the fridge and simply pop them in the microwave for about 30 seconds before eating. They're full of flavor, healthy and low carb/keto approved!

For this super easy egg muffins you'll need eggs (duh), salt, pepper, sharp cheddar cheese, roasted red peppers, garlic powder, onion powder, paprika and cayenne.

Preheat oven to 400 degrees and spray a muffin pan generously with nonstick spray. Whisk eggs and spices in a medium-sized mixing bowl.

Stir in chopped spinach and roasted red peppers.

Whisk in cheese.

Fill muffin cups ⅔ to ¾ full. Bake for 12-15 minutes.

Allow to cool. They should come out of the muffin pan easily.

**I made two different muffin versions which is why they look a little different in this picture! I'll post the other recipe soon!**

These are literally so easy to make and heat up very well!

Serves: 12
Ingredients
  • 10 eggs
  • 1½ tsp. sea salt
  • 1 tsp. fresh ground pepper
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. paprika
  • ¼ tsp. cayenne
  • 1 jar roasted red peppers, diced
  • 1 cup spinach, chopped
  • ¾ cup sharp cheddar cheese, grated
  • nonstick spray
Instructions
  1. Preheat oven to 400 degrees.
  2. Spray a muffin pan with nonstick spray.
  3. Whisk together eggs and spices in a medium-sized mixing bowl.
  4. Whisk in peppers and spinach.
  5. Whisk in cheese.
  6. Pour into muffin tray cups filling ⅔ - ¾ full.
  7. Bake for 12-15 minutes.
