Watermelon Mojito

If you're looking for the perfect refreshing summer cocktail look no further! The Watermelon Mojito is the best poolside/patio cocktail to quench your thirst during the 90 degree August days. I actually spent all day at the pool at my parent's today sipping on these bad boys.

The Mojito is of Cuban origin and typically consists of white rum, lime juice, sugar, mint, and club soda. In this variation I also incorporate watermelon and cucumber both of which are known for their revitalizing taste. I also love adding them to my water.

To make this cocktail add simple syrup, fresh lime juice, and rum to a shaker. Add in slices of watermelon, cucumber, and mint and muddle into the liquid. Add ice and shake. Strain into a glass with ice and top with a little club soda.

Ta-da! Feel free to garnish with a mint sprig and/or some fun cocktail umbrellas. Cheers!

Ingredients
  • 0.5 oz simple syrup
  • 0.75 oz fresh lime juice
  • 1.5 oz white rum
  • 5-6 slices of watermelon
  • 2-3 slices of cucumber
  • sprig of mint
  • Club Soda
Instructions
  1. Add simple syrup, lime juice, rum to a shaker.
  2. Add watermelon, cucumber, and mint and muddle into the liquid.
  3. Add ice, shake, and strain into a glass with ice.
  4. Top with a little club soda.
  5. Garnish with a mint sprig or cocktail umbrella.
