Whole Roasted Trout

One thing you should know about my fiancé is that he's SUPER into fishing. Like I'm talking get up extra early before work to fish and drive hours to specific locations at 4am on a weekend to fish. Lucky for me he's amazing at it too, because I LOVE seafood. Another fun fact is that he didn't eat fish whatsoever until we started dating. I eat it so often I kept urging (annoying) him to try things. There's still a lot he doesn't eat, but he's gotten WAY better about it. I just found it hilarious though that someone who fished so often never actually ate the fish he caught until these last several years. LOL. He throws most stuff he catches back with exceptions of what we like to cook. Trout is a great example of what makes it home and to the dinner plate. This is just one of my recipes for trout. Don't let the whole fish freak you out either, it's delicious.

To make this recipe start by spraying a baking sheet with nonstick and heating oven to 450 degrees. Rinse filleted fish in cold water and then rub with a little olive oil. Season generously with salt and pepper on both sides. In a small bowl mix together more oil, lemon juice, garlic, paprika and red pepper flakes. Rub your spice mix inside of the fish. Also place slices of lemon and sprigs of thyme, rosemary, oregano and sage inside fish. Arrange some tomatoes and any other veggies you'd like around the fish and drizzle with more oil and season with more salt & pepper. Roast for about 20 minutes before serving. You can simply pull at the skin with a fork and it'll fall right apart! mmmm. Enjoy!

Serves: 2
Ingredients
  • 2-3 whole trout, filleted
  • 3 tbsp. olive oil, divided
  • salt & pepper
  • 10 garlic cloves, minced
  • ½ tsp. red pepper flakes
  • ¼ tsp. paprika
  • 1 lemon, sliced into rounds
  • sprigs of thyme, oregano, rosemary and sage
  • 2-3 tomatoes, sliced
Instructions
  1. Preheat oven to 450.
  2. Spray a baking sheet with nonstick spray.
  3. Rinse fish in cold water and dry with paper towel.
  4. Drizzle with olive oil.
  5. Season with salt and pepper.
  6. In a small bowl combine tbsp. oil, lemon juice, garlic, red pepper flakes & paprika.
  7. Spread inside of fish.
  8. Add lemon slices and sprigs to inside of fish as well.
  9. Place tomatoes around fish. Drizzle with remaining oil and season with salt and pepper.
  10. Bake for 20 minutes.
