Brie & Prosciutto Crostini with Cranberry and Mint

Ingredients
  

  • French baguette cut into 1/3-inch slices
  • 2 tbsp olive oil
  • 1 wheel Brie sliced to fit crostini, rind removed
  • 3 oz Prosciutto sliced and rolled
  • 1 small can cranberry sauce (or easy homemade, see note in post)
  • fresh mint
  • 1/4 cup balsamic vinegar
  • 2 tbsp brown sugar
  • toothpicks

Instructions
 

  • Preheat oven to 400 degrees.
  • Brush crostini with olive oil.
  • Toast in oven for about 8-10 minutes flipping halfway through.
  • Meanwhile heat balsamic vinegar and brown sugar in small saucepan over medium heat. Bring to simmer, stirring to dissolve sugar. Simmer on low 5 minutes or until sauce has thickened. Set aside to cool.
  • Allow crostini to cool then spread with cranberry sauce.
  • Add Brie.
  • Then Prosciutto.
  • Top with small mint leaf. Secure with toothpick.
  • Drizzle with balsamic glaze right before serving.
