Blueberry Mojito (with Kiwi and Spiced Rum)

This Blueberry Mojito (with Kiwi and Spiced Rum) recipe is the perfect, refreshing summer cocktail. Sweet, juicy blueberries, combine with tart, tangy kiwi, zesty lime, fresh mint, sugar, a boozy kick of spiced rum, and fizzy club soda for an invigorating party in your mouth.

Ingredients
  

  • 2 kiwis peeled; + slice for garnish
  • 0.5 oz simple syrup
  • 0.75 oz fresh lime juice
  • 6-8 fresh mint leaves + sprig for garnish
  • 1/4 cup fresh blueberries more for garnish
  • 1.5 oz rum spiced
  • club soda for topping
  • ice

Instructions
 

  • In a blender, bullet, or food processor mix together your kiwi, simple syrup, and lime juice until smooth.
  • In a Collins glass (or any tall skinny glass) add most of your blueberries, mint, and rum.
  • Muddle blueberries and mint into rum.
  • Pour in kiwi mixture.
  • Add ice, stir.
  • Top with club soda.
  • Garnish.

Notes

To make your own simple syrup:
Simply bring ½ cup water and ½ cup sugar to boil in a small saucepan, reduce heat to simmer, and cook for about five minutes stirring occasionally. Remove from heat and allow to cool completely before using. Store in an airtight container in the refrigerator for up to a week.
To make this Blueberry Mojito into a large batch for a party:
Triple or quadrupling this recipe and serving in a pitcher or drink dispenser. Just make sure you leave out the ice and club soda until right before serving to keep it from becoming watered down or the club soda going flat.
