Creamy Au Gratin Potatoes

Evening everyone! I apologize for my lack of posts this past week. My birthday was Monday, and my family, friends, and boyfriend have sure kept me busy with celebrating. I'm so lucky to have such wonderful people in my life who have made me feel incredibly special. Along with that I also had a work offsite this week. But no more excuses! I'm excited to share with you one of my all-time favorite recipes which is also the first recipe I learned how to cook from my parents. For my birthday Monday we decided to forego heading out to dinner and instead cooked out at our place on account of the gorgeous sunny 80-degree weather. My boyfriend grilled filets, and even though it was my birthday and he offered to cook everything, he couldn't keep me completely out of the kitchen. 😉 I used my birthday as an excuse to splurge on this delicious, creamy, cheesy, potato dish. Trust me, it's worth it. I've made it tons of times over the years, and it has always lead to a completely empty casserole dish and multiple recipe requests.

For this recipe you'll need potatoes, butter, flour, milk (2%-whole), cheddar cheese, Parmesan cheese, regular chips, salt, and pepper. Start by preheating your oven to 350 degrees and peeling and chopping your potatoes into thick slices.

Bring potatoes to boil in a large pot until just fork tender. They will continue to cook in the oven. If you boil them too long then they will completely fall apart after baking. Drain into a strainer.

While your potatoes are cooking, prepare your cheese sauce. Chop your block of cheese into cubes (or purchase previously cubed cheddar cheese). Start by melting the butter to a medium-sized saucepan over medium heat.

Stir flour into the pan after the butter has melted a little at a time. It will start clumping up. Next, slowly stir in your milk a little at a time. It's best to allow the milk to reach room temperature first. The sauce should start to thicken.

Once your milk has been added and the sauce thickens, add your salt, pepper, cheddar cheese, and Parmesan cheese. Turn heat down to low and stir contentiously until the cheese has completely melted.

Once your cheese has melted, remove from heat. Add your potatoes to a casserole dish. Pour the cheese sauce over the potatoes and gently stir to coat. Crumble potato chips over the top of the dish. This will give it a nice crunch once cooked. Bake your dish for 30-35 minutes.

Your Au Gratin Potatoes will come out of the oven sizzling and mouthwatering! Let them cool slightly before serving.

This is a great indulgent side to accompany any dish! I hope you love it as much as I do!

Serves: 6
Ingredients
  • 5-7 potatoes, peeled and sliced
  • ¼ cup butter
  • ¼ cup flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cups milk (2% or whole)
  • ½ cup Parmesan cheese
  • 1 cup cheddar cheese
  • crumbled potato chips for topping
Instructions
  1. Preheat oven to 350 degrees.
  2. Boil potatoes in a large pot until fork tender. Drain.
  3. Melt butter in medium-sized saucepan over medium heat.
  4. Stir in flour, slowly, a little at a time. It will begin clumping.
  5. Stir in milk, slowly, a little at a time. It will begin to thicken.
  6. Once sauce has thickened add cheeses, salt, and pepper.
  7. Turn down heat to low and stir until cheese has melted.
  8. Remove from heat.
  9. Place potatoes in a casserole dish and pour cheese sauce over. Carefully mix to incorporate.
  10. Crumble potato chips over top of casserole.
  11. Bake for 30-35 minutes.
