Cuban Sandwich

Did anyone else get hit with snow overnight? We were supposed to get eight inches yesterday, but instead we just got a lot of freezing rain. Around 9pm it finally started snowing and now apparently we're under a level two snow emergency and some places are under a level three! I was supposed to be shopping and then getting my hair done but with so many places being closed (including my hair salon) instead I'm going to be working on blogging and cooking all day! Not mad. Brad and I are also starting to plan all of our 2019 trips! Let me know if you have any recommendations!

Anyways, back to the reason you're here. This yummy Cuban sandwich. You might already have all the ingredients to make it (there's only six) which means not having to venture out in the cold. It's perfect for lunch or a quick dinner.

Start by preheating your oven. I broil it for a couple minutes at the end. Ciabatta is my favorite bread to use for this sammy. I buy a fresh loaf, cut off the ends (you can use them for your sandwich but they tend to be round and thicker on Ciabatta and I like to press these thin with straight edges), then cut the remaining middle in half and also slice horizontally to open. Rip out some of the bread on the inside to allow for room and to keep the sandwich from being to starchy. On one side cover in mustard.

Add Swiss cheese.

Then sliced smoked ham (I pick up from my local deli).

Then dill pickle rounds.

NOW you have multiple options for how to toast your Cuban. Obviously you can use a panini press, but I haven't purchased one yet. You can also use a grill or George Forman. But it's too cold and snowy to grill for me rn (sorry Dad, I know I'm a disappointment LOL) and our Forman broke. Sooo another super easy way is to simply use a large skillet (preferably cast iron) and press down on your sandwich with a pot lid/cover. Put some butter in your cast iron and melt. Then add your sandwich and toast (just like making a grilled cheese).

Press down hard on the sandwich with the pot cover to press. Once the bottom of your Cuban is a nice toasted light brown, flip and repeat on the other side. Again, I like to broil in the oven for a couple minutes at the end to make sure the cheese is perfectly melted and heated throughout. If you use a cast iron you can just throw the whole thing in the oven which is perfect for people like me who hate dishes (I mean who likes dishes though?).

Slice in half and serve! Enjoy and stay warm out there!

Ingredients
  • 1 fresh loaf of Ciabatta bread, ends removed, cut in half vertically and horizontally
  • mustard
  • 4 slices of Swiss cheese
  • 8 oz smoked ham
  • deli pickle rounds
  • butter
Instructions
  1. Preheat oven to broil.
  2. Tear some of the bread out of the inside of your Ciabatta.
  3. On one side spread mustard and top with pickles.
  4. On the other side add your cheese then top with ham.
  5. Put one half on the oven.
  6. Heat a cast iron skillet and melt a little butter.
  7. Add your sandwich, one at a time. Press down hard on the top to press with a pot lid. (See other toasting options in post.)
  8. Once the bottom is browned and toasty, flip and repeat.
  9. Broil for a couple minutes at the end.
  10. Slice in half and serve.
