Honeycrisp-Cinnamon Infused Old Fashioned

It's hard for me to pick a favorite cocktail. I usually do not discriminate. However, there's something about the oaky, smoky, spicy taste of whiskey - especially in the colder months that makes it a no brainer cocktail of choice for me. More specifically - Old Fashioneds. The boozy-citrus-sweet combination is perfection. I was playing around at my home bar tonight and came up with this sensational fall appropriate twist on the pre-Prohibition classic.

For the Honeycrisp-Cinnamon Infused Old Fashioned you will need, three Honeycrisp apples, sugar, water, orange juice, whiskey or bourbon (I prefer rye bourbon), cinnamon, orange bitters, and lemon juice.

Honeycrisp apples are only in season for long, so I have to make the most of them when they are. They are mouth-wateringly juciy. And how gorgeous?!

Start by dicing two honeycrisp apples.

Add to a small skillet over medium heat with some water. Bring to a simmer and stir until apples are tender. Transfer to a food processor. Pulse until smooth then strain through a mesh sieve.

Add mixture back to saucepan with sugar and cinnamon. Stir until fully dissolved. Remove from heat and allow to fully cool.

In a rocks glass add a whiskey ice ball, bourbon, a splash of fresh orange and lemon juice, orange bitters, some of the honeycrisp-cinnamon syrup you just made, stir well, and garnish with a little ground cinnamon and a couple slices of apple. I'm curled up on my couch enjoying a couple of these tonight and hoping Monday doesn't come too fast tomorrow. Cheers! 😉

Ingredients
  • 1.0 oz honeycrisp-cinnamon syrup (2 honeycrisp apples - diced, ½ cup water, ½ cup sugar, ½ tsp. ground cinnamon)
  • 2 oz bourbon
  • 0.5 oz fresh lemon juice
  • 0.5 oz fresh orange juice
  • 2-3 splashes orange bitters
  • ground cinnamon, apple slices - garnish
Instructions
  1. Add apples and water to a small saucepan and bring to simmer over medium heat.
  2. Stir until apples are tender.
  3. Transfer to a food processor and pulse until smooth.
  4. Push through a mesh sieve to yield about ½ cup liquid.
  5. Return to saucepan and add ½ sugar and cinnamon.
  6. Stir over medium heat until dissolved.
  7. Remove from heat and allow to fully cool.
  8. In a rocks glass add a whiskey ball (or ice).
  9. Add bourbon/whiskey, lemon/orange juice, bitters, and honeycrisp-cinnamon syrup.
  10. Stir.
  11. Garnish with cinnamon and apple slices.
