Sparkling Amore

Happy New Year everyone! It wouldn't be right to ring in the new year without champagne. I've been sipping on these concoctions since last night! You will need: sugar, water, fresh lemon, fresh rosemary, and Prosecco. I've coined them "Sparking Amore", because I have a feeling this year will be all about love. With just getting engaged, adopting three kittens, and so many of my friends getting married in 2017 I found it fitting. (I know I'm corny as shit). And Amore, because Prosecco is Italian, obvs. 😉

Bring a cup of sugar and ½ cup of water to boil in a small saucepan over high feet. Add lemon zest and fresh rosemary. Reduce heat and simmer for about 5 minutes. remove from heat, discard lemon zest and rosemary. Stir in lemon juice and salt. Allow to cool then place in freezer until almost frozen. It should form a slushy consistency. Spoon 1-2 tsp. into a champagne flute and top with Prosecco. Garnish with a rosemary sprig. Cheers!

Ingredients
  • 1 cup sugar

  • 1 tsp. lemon zest
  • 6 large sprigs fresh Rosemary
  • ¼ cup fresh lemon juice
  • 1 bottle Prosecco
Instructions
  1. Bring sugar and water to boil in a small saucepan over high heat.
  2. Add lemon zest and 2 of the rosemary sprigs. Stir.
  3. Reduce heat and simmer for about 5 minutes.
  4. Remove from heat, discard lemon zest and rosemary and stir in lemon juice.
  5. Allow to cool to room temperature.
  6. Place in freezer until almost frozen/slushy consistency.
  7. Spoon 1-2 tsp. of the mixture into each champagne flute.
  8. Top with Prosecco.
  9. Garnish with rosemary sprig.
