Veggie Kabobs

Happy Memorial Day weekend everyone!! I hope you're all enjoying the weather and some much needed time off from work! Last weekend Brad and I were in NYC because I was up for a conference the week before and he had one the week after. He had a work event that Sunday night in the top of the Freedom Tower where they rented out the restaurant and we got to enjoy an open bar and the most breathtaking views of the city. It was amazing. We also went to a ton of other bars and restaurants and I have some review posts coming! Its been nice being home all weekend this weekend and getting lots done around the house as well as grilling out of course! My mom and I bought wayyyy too many flowers and spent lots of time in my backyard beautifying, and I'm getting ready to head to the pool here shortly. But first, I wanted to share with you a tasty side dish recipe for any Memorial Day cookouts you might be attending or hosting today!

For my Veggie Kabobs you can really use any vegetables you want. This time I went with zucchini, grape tomatoes, mushrooms, red onion and red pepper. Also be sure to soak your skewers in some water prior to adding vegetables and grilling. I like to slice the veggies in thick slices or for some (mushrooms, grape tomatoes) just leave them whole. Add to a large bowl and toss with olive oil, lemon juice, red wine vinegar, garlic powder, Italian seasoning, salt and pepper. Let sit in this marinade for about 15 minutes then add to skewers.

Grill over medium-high heat for about 5 minutes per side. Mmmm I love that charred grill taste. Serve immediately. These can go with any entree, are full of flavor, healthy and perfect for your vegetarian/vegan friends. Enjoy! I'm off to the pool!

Serves: 6
Ingredients
  • 1 large zucchini, sliced into wheels
  • 1 cup grape tomatoes
  • 2 red peppers, sliced thick
  • 1 red onion, sliced thick
  • 2 cup cremini mushrooms, whole or sliced in half for the larger ones
  • ¼ cup olive oil
  • juice from 1 large lemon
  • 2 tbsp. red wine vinegar
  • 1 tsp. Italian seasoning
  • ½ tsp. garlic powder
  • ½ tsp. salt
  • ½ tsp. fresh ground pepper
Instructions
  1. Add veggies to a large bowl.
  2. Add rest of ingredients and toss.
  3. Let sit for 15 minutes.
  4. Thread veggies onto skewers.
  5. Grill of medium high heat for 5 minutes per side.
