Pesto Broccolini

Ingredients
  

  • 1/2 lb broccolini (or broccoli crowns) chopped (mostly heads, some upper stem)
  • 1 cup fresh basil
  • 2/3 cup fresh Parmesan grated
  • 4-5 cloves garlic chopped
  • 1/4 cup walnut pieces
  • 1/2 tsp salt
  • 1/4 tsp fresh ground pepper
  • 2/3 cup olive oil extra virgin

Instructions
 

  • Bring a large salted pot of water to boil over high heat.
  • Boil broccolini for about 3 minutes. Drain and pat dry with paper towel.
  • Add broccolini, basil, Parmesan, garlic, walnuts, salt and pepper to food processor.
  • Secure lid and mix until combined.
  • Add olive oil and mix until smooth.
